A book and a recipe
Not all psych meds are pills...
I had a solid belly laugh reading a comment that read, in part, “…personality of unsalted tofu…”. Well, I've got a cure! For the unsalted tofu, not the personality.
First, a book recommendation: “How Not to Die”, by Dr. Michael Greger and Mr. Gene Stone. After four abdominal surgeries and two rounds of sepsis, I've found the dietary advice in that book - along with its numerous cited works - invaluable for getting my life back. From a scientific perspective, it's not perfect but he is on target far more often than not.
Now, to change your day-
Lemongrass Tofu
Ingredients:
1 tbsp vegetable oil
3 shallots, diced
3 cloves of garlic, diced
2-3 stalks of lemon grass. Discard the harder outer layers and chop.
½ to 1 tbsp red chili flakes in chili oil
1lb firm or extra firm tofu, cut into strips
1-2 tbsp soy sauce, depending on how salty you want it
Sautee shallots in oil until translucent
Add in garlic, lemon grass, and chili. Stir over medium heat until the lemon grass is soft
Add tofu and soy sauce, stir fry until cooked through - five to ten min
Serve over rice
Tip: works best with frozen tofu, when frozen the tofu becomes spongy and absorbs the sauce better
